Stir fried rice is cooked rice that has been stir fried in a wok or frying pan, and is usually mixed with vegetables, eggs, chicken and prawns.
INGREDIENTS
3 cups basmati rice
3 bell peppers
4 carrots
2 cups sliced mush rooms
1 cup shredded cabbage
1 bunch spring onions
1 cup boiled corn
4 eggs
3 tsp salt
1 tsp white pepper
1 tsp ground black pepper
3 tbsp. white vinegar
2 tbsp. Light soya sauce
4 tbsp. sesame oil
DIRECTIONS
Wash and soak the rice for 15 minutes, then boil drain and set aside. In a bowl beat eggs with pinch of salt and pepper heat the 1 tbsp. oil in a frying pan and pour eggs when eggs golden from both side roll it and take it out. On the chopping board thinly sliced the eggs and put on one side. Cut carrots in Julian cut and bell peppers in small cubes and finely sliced spring onions. In a wok heat the oil when it’s sizzling hot add white part of onions after I minute add carrots fry for another couple of minutes then add cabbage after half a minute add corn and fry then peppers and mushrooms and stir fry. Now add salt, white pepper, black pepper, Chinese salt, and boiled rice mix and add vinegar and soya sauce, on the top sprinkle eggs and green part of spring onions and put the lid on turn down the heat on low for 10 minutes. Turn off the heat and serve rice immediately on its own or with sweet and sour chicken.
