Rich Savory Shepherd's Pie


It might be summer but its a Scottish summer which means plenty of rain. Why not try the warming comfort of our shepherd's pie as the rain drizzles down your windows. Not only are they delicious and nutritious our Fair Food Transformation meals help create healthy family meals from simple ingredients.

SHEPHERD PIE

Shepherd's pie is a meat pie with a topping of mashed potatoes, if you have left over mince use that mince, add vegetables and transform mince into shepherd pie.

INGREDIENTS

500g lamb mince

4 big potatoes

1 medium onion

4 carrots finely chopped

1 vegetable stock

1 tsp salt

½ tsp black pepper

½ tsp chilli flakes

½ tsp gram masala

1 tbsp. ginger garlic paste

2 tbsp. oil

1 tbsp. Worcestershire sauce

1 jar of pasta sauce

1 egg

4 tbsp. milk

1 tbsp. butter

3 tbsp. grated cheddar cheese

DIRECTIONS

Peel potatoes and boil them in salty water about 15 to 20 minutes or until soft drain well, mash with milk, butter, egg and grated cheese and season to perfection.

In a deep frying pan add oil and chopped onions fry 3 to 4 minutes, add ginger garlic paste and mince on a high heat, add salt, pepper, chilli flakes and cook for 15 minutes until dark golden.

Add carrots and stir into the pan for further 10 minutes, add Worcestershire sauce, vegetable stock, pasta sauce simmer on a low heat about 10 minutes.

In the mean while preheat oven on 200c.

Check the consistency of the mince you want it slightly wetter and check for the seasoning again, if you need more adds more.

In an oven proof dish transfer mince into the dish and scoop all the mash on top, using a fork to scuff it up and bake for 45 minutes serve with fresh avocado salad.
